Introduction
If you asked an American when we use the word “such” [sʌtʃ] instead of “so”, it wouldn’t be so easy for that person to explain the difference between the two words.
Such
Meaning: adjective / “of the kind, character, degree, extent, etc., of that indicated or implied.” (Source: Dictionary.com)
So
Meaning: adjective / informal / to the extent or degree indicated or suggested (Source: Dictionary.com);
Informal, modern meaning: very or extremely
Basically, we use “such” and “so” to describe the degree of something, often times to say “very much”.
Notice below the noun phrase after “such” and an adjective after “so”.

“He is such a kidder.”
“He is so funny.”
“There is such a strong smell in this room.”
“It is so smelly in this room.”
“This is such a delicious meal. Thank you!”
“This meal is so delicious. Thank you!”
“Her behavior is terrible. She is such a jerk!”
“Her behavior is terrible. She is always so mean!”
